A brown butter and pecan praline experience made unique with rich, earthy sorghum syrup.An elemental masterpiece sweeted with Sorghum, an ancient grain from West Africa that survived The Middle Passage and became a staple of the American South.We honor the resilance of the grain and the people who cultivated it.Heritage, in cookie form.

The Archive Wing

The 1796 “Cookey”

A rich, buttery masterpiece with aromatic caraway and a signature "melt-away" crumb.We uncovered the recipe for the original "Cookey," published in America's first cookbook, Amelia Simmons' American Cookery (1796).We honor this legacy that marked the birth of American baking, while refining the recipe for contemporary tastes.History you can taste.

The Concept Wing

"Strawberry Solstice"

A Lemon-zested panko crust around a strawberry-studded core — three textures in conversation, designed to make you reach for another.This creation challenges what a cookie can be. We take the familiar strawberry shortcake ice cream bar and deconstruct it into layered architecture: citrus-armored panko, white chocolate tenderness, and freeze-dried strawberry intensity.This is nostalgia pushed forward—childhood memory refined through technique, texture sequencing, and acid-balance engineering.Art you can eat.
